Born in the tropical Philippines, Thomas grew up in the vineyards of Alsace and, after travelling around the world, has finally settled in the kitchen at the Château de Mareil-Le-Guyon. He will take you on a journey with his spontaneous, generous ‘home-made’ cooking, simmered in the traditional way. Come and try his seasonal cuisine, cooked over a wood fire with produce sourced from small, local producers.
